Generic Itinerary

This may be a dumb question...but how do I create a generic itinerary without a client. I want to show some proposal itineraries without having it tied to a client and something that people can inquire about within itinerary itself. Travefy has this option, but wanted to see if I can do this with Travel Joy

  I'm new to TJ and to the travel industry.  Can you make a dummy client to use for generic proposals?
